Sugar Cookies Recipe

Ingredients:

– 420g Plain Flour (without raising agent)
– 250g Unsalted Butter
– 200g Granulated Sugar
– 1 Large Egg
– 2 Teaspoons of Vanilla Extract (or Almond Extract)

Steps:

1. Whisk softened butter and sugar until mixture is creamy and well-combined

2. Add vanilla extract and egg into the mixture and beat to combine

3. Add flour and knead the mixture until consistency of a soft dough is achieved

4. Chill the dough in refrigerator for approximately 1 hour

5. Roll the chilled dough onto a baking sheet to 5mm thick.

Note:

– If the dough becomes too hard after chilling, knead it lightly to soften it.

– If the dough becomes too soft for cutting, place the tray of rolled dough back to the refrigerator for about 10 minutes before cutting it again. This step may need to be repeated in a warmer environment.

6. Use your favourite cutters to cut out the biscuit shapes you desire. (Essential tips: coat the cutters in flour before each cut to make the release of dough from cutters easy)

7. Remove the excess dough remnants from the baking sheet (instead of transferring cut dough onto another sheet). This method avoids the handling of dough and hence prevents shape distortions during transfers.

8. Preheat oven to 170 degree Celsius (CAUTION: HOT!), and bake the dough for 10-15 minutes.

9. Once the baked biscuits are cooled, they are ready to serve. Party!!!

Matcha Cookies Recipe

Ingredients:

  • 420g Plain Flour (without Raising Agent)
  • 250g Unsalted Butter
  • 200g Granulated Sugar
  • 1 Large Egg
  • 2tsp Macha Powder
  • 1tsp Vanilla Extract

For best results mix ingredients at room temperature. Prep time: 20 minutes, chill time: 1.5 hours

  • Mix softened butter and sugar together until the mixture is smooth.
  • Add vanilla extract and egg to the mixture and beat to combine.
  • Add Matcha powder and about half of the flour and mix until combined. Then add the rest of the flour and knead until you have a soft dough mixture.
  • Split the dough equally in two and chill in the fridge for about 1 hour.
  • Once chilled roll out your dough onto baking paper to 5mm thickness and cut out designs. For best results further chill for about half an hour before baking. Bake at 170C for 10 minutes.
  • Leave to chill before decorating and serving.

Chocolate Cookies Recipe

  • 1 large egg
  • 1tsp Vanilla Extract
  • ½ tsp salt
  • Splash of milk

For best results mix ingredients at room temperature. Prep time: 20 minutes, chill time: 1.5 hours

  1. Add vanilla extract and egg to the mixture and beat to combine.
  2. Add cocoa powder, salt and about half of the flour and mix until combined. Then add the rest of the flour and knead until you have a soft dough mixture. Add a splash of milk if the mixture is too dry.
  3. Split the dough equally in two and chill in the fridge for about 1 hour.
  4. Once chilled roll out your dough onto baking paper to 5mm thickness and cut out designs. Use cocoa powder in place of flour when rolling out your dough.
  5. For best results further chill for about half an hour before baking. Bake at 170C for 10 minutes.
  6. Leave to chill before decorating and serving.
